Creamy Chicken and
Wild Rice Soup

Ingredients:

chicken breasts

c chicken broth
2
boxes Uncle Ben's Wild Rice (original)
4
carrots, sliced
2
stalks celery, sliced
2
lg cans cream of chicken soup
1
pint heavy whipping cream
Directions:
Boil
chicken in broth. Strain broth and put it back in the pot. Shred the chicken
and set it aside. Add both boxes of rice (with seasoning packets) to the broth.
Bring to a boil. Add shredded chicken, carrots and celery. Simmer 15-20
minutes. Add the cream of chicken soup and whipping cream. Simmer a few minutes
and serve.
This
makes a large batch. Enough to feed a large family plus plenty leftover to take
dinner to another family or freeze. So you can always cut this in half if you
don't need a large amount.
