Shepherd's Pie


Shepherd's Pie

Ingredients:
2 lbs potatoes, peeled and cubed
Milk, butter, etc
(Make your own version of mashed potatoes how ever you like them.  Even instant for a quicker meal!)
1 1/2 lbs ground beef
1 onion, chopped
2 T fresh parsley
1 cup frozen peas and carrots
2 T butter
2 T flour
1 1/2 c beef broth
2 T tomato paste
3 T Worcestershire sauce (can be adjusted for taste, but this is what gives it the zing!)

Directions:
Brown beef and onions. Drain well.  Set aside.  In the same skillet, melt the butter.  Add the flour, whisk and cook 2 min.  Whisk in broth, tomato paste and Worcestershire sauce.  Thicken gravy 1 minute.  Add in peas and carrots and 1 T parsley.  Add in beef and onions.  Mix well. Spoon meat mixture into a baking dish.  Place potatoes in large dollops on top and carefully spread to cover the meat.  Bake 20 min at 350 or broil for just a few minutes. Top with remaining parsley.

*This is great for a make ahead dish, just add more baking time to rewarm.
