Turtle Pumpkin Pie



Turtle Pumpkin Pie

Ingredients:
1/4 c plus 2 T caramel topping, divided
1 graham cracker pie crust (6oz)
1/2 cup plus 2 T chopped pecans
 2 pkg (3.4 oz each) Jell-O Vanilla Instant Pudding OR Pumpkin Spice flavor
1 cup cold milk
1 cup canned pumpkin (not pumpkin pie filling)
1 tsp cinnamon
1/2 tsp nutmeg
1 tub Cool Whip, thawed

Directions:
Pour 1/4 c caramel topping into crust; sprinkle with 1/2 c pecans
Beat pudding mixes, milk, pumpkin, and spices with whisk until blended.  Stir in 1 1/2 c cool whip.  Spoon into crust. Refrigerate 1 hr.  Top with remaining Cool Whip, caramel and pecans just before serving.
